Y's Surprise
Ingredients:
8 large Red Potatoes

1 large onion

1 lb. sausage (hot or mild)
1 dozen large eggs
1 large jar picante sauce
salt, pepper, garlic powder
Peel and dice potatoes and fry in large skillet.  Add onion and season to taste.  Cook sausage in seperate pan and season to taste.  Meanwhile, beat eggs and season if you wish (I did).  Combine potatoes, sausage, and egg into one skillet.  cover and simmer until eggs are stiff.  Slide onto large plate or platter and serve with picante sauce.

AWARD WINNING POTATO SOUP
Ingredients:
3/4 lb. Potatoes
2 stalks celery
1/2 cup onion
garlic powder
lemon pepper
vegetable broth
butter
whole milk (or any other % depending how much you care about your health)
Saute vegetables and spices in butter.  Add flour if you prefer a thick soup.  Simmer for about an hour (or until potatoes are tender) in enough broth to cover vegetables.  Add milk to desired consistency and simmer for ten more minutes.  That's all there is to it!
